I am trying to source parts for this build and need clarification on one item. For C100 the build documentation says it’s a 100uf electrolytic capacitor with a size of 5mm. When I search for this I have several different options. What size do I need (5x7 or 5x11) and which voltage? I see 10, 16 and 6.3v. I am ordering from tayda since that is where I sm getting my enclosure.

You'll need a voltage rating greater than the input.
So in most cases this means 9V power, and >9V cap rating. Rule of thumb is ~2x rated input voltage is safe and gives a okay life on the cap. You can get 16V Panasonic in 5×11 from Tayda all day. StompBoxParts also carries a 5×11 16V I think.
Something higher like 25V will put you into the 6mm territory. No really getting around that.
Looking at the board, it's got plenty of room around it, I reckon you can get a 6mm in there no problem.
Just be mindful of the height of the cap and lead spacing, which is 2mm ±0.5 for these.
