EEPROM Builder…I’m sorry if this is dumb…

There's also a couple of utility PCBs out there for this.
I believe it's guitarpcb and maybe fuzzdot that have pot swap boards
I actually JUST came across guitarpcb’s 2 knob job and thought that could be used. The diagram is a little confusing looking lol like obviously the P1 pot would stay on the main board, so is that running wires from the P1 terminals & the abc terminals to the desired pot’s lugs on the motherboard? 6 wires, 2 to each lug?

Here's what I was mentioning before.
Also. Keep in mind with these being digital, you may not get the feedback type you want.
You could also use a 2 pole switch and route a bit of output back to the input for added feedback.
So with a stomp you get a knob change and actual pedal feedback.
 
Also. Here's the fuzzdot board
I'm not certain these will work great in this application though.
These use the pots invariable resistors, not voltage dividers
I feel like you won't get a full 0-3.3v swing that way.
