Replacing pots with trimmers

For my next build I am going for a minimalistic approach and wanting to replace the pots with internal trimmers. Is there anything wrong with simply replacing the pot with an identical value trimmer, like this 3006P for instance?

Nothing wrong with it at all. I do it all the time. Make sure that your trimpot leads are long enough to fit the pads and positioned correctly so that you can access the adjustment when its all boxed up. The side adjust ones like your example have good lead spacing but the adjustment can get blocked by certain orientations.
