Suggestions on what to build next.

When you decide to build a Fuzz Face, I suggest the Foundry Deluxe. It helped me to realize how I want a fuzz face to sound. Basically I found my favourite settings on the Foundry Deluxe, and then I built a standard Foundry with a preferred input Cap, and either Ge or Si, to achieve a similar sound and feel.
As for the Big Muffs, build a variation with the diodes, that you can swap. But also build an Opamp version. The Persica is great. With a useful tone knob.
And it looks like you need a Phaser. Phase II and the Circulator are both great. Phasers are a different wave, compared to a Uni-vibe, which you have.
And a Tremolo. The Moonshot tremolo is my go to. I’ve built and owned a bunch of trems. The moonshot is the BEST. No colouration to your tone. And a wide range of speed. It’ll do a great hummingbird, or a real slow wave. And it has volume control.
Also, you need some octaves in your arsenal.

Sushi box Black Eye is an amazing distortion, with a very satisfying tube sound. It's a straightforward build, but because of the high voltages it can get quite challenging if something goes wrong. It was my first attempt and i ended up alive and well at the end of my building process, with lots of foolish mistakes and hours of troubleshooting.

Some Boss OD-3 and a BD-2 would also be welcome. They are very popular for good reasons. There are many available projects for both of them. Bd-2 is fun to modify to suit your tastes.

A modded DS-1 can't hurt, depending on the modifications, it can be an amazing distortion. Mondo-MIJ version is great (p.18) :

PPCB Cream Pie (Frantone Cream Puff fuzz) is very impressive, i think it sounds even better than the Big Muff op-amp, which was my favorite big muff variant so far.

For modulation, Flintlock Flanger (A/DA flanger) from Lectric Fx and Aion's Spectron (Lovetone Meatball) should be at the top of your building list. In their own categories, they're the best available projects, in my humble opinion. Everything will feel like a nice walk in the park compared to these two complex builds... They will make you a better diy pedal builder.

You don't have a single chorus : Delyk's 2nd Choral is the most interesting project i 've built : a CE-2 with useful mods included, and a clean/wet control.
Modding a cheap CH-1 from the used market is also quite interesting, and sounds just as beautiful as a CE-2. If i understood correctly, most chorus circuits out there are CE-2 variants, and none of them can beat the original...
With your current experience level, you could also try to build Aion's Blueshift.

No octaver ? Delyk's Up and Down Daddy is the Pearl OC-7 clone, probably the best sounding octave circuit ever made. Madbean has a project for this one too, surely easier to build than Delyk's, but with a bigger pcb. It features 2 octaves down and one octave up, which is very useful and quite unusual with octavers.

PPCB Gravitation reverb is very good, my favorite so far.

If you 'd like to try an FV-1 circuit, Hydra Delay and Unison are both amazing.

Pro-cessor is always a great tool to have : a splitter-mixer-blender opens a lot of possibilities. Only downside : no footswitches to use it while playing.
I had to build an other send/return looper to be able to use the Pro-cessor with my foot.

Aion's Meridian (Guyatone PS-21) is very useful to shape the signal. It does things that other compressors can't do. The bass version, PS-20, works very well on guitars and many other instruments ( drum machines, synthetizers, etc).

@kristopher All solid suggestions, thanks!

@eh là bas ma I already built the Black Eye and love it! I have the first version and finally got around to adding the buffer board to it the other day. I've built one FV-1 circuit so far (the VHS) and would mind doing another. Also thanks for all of the information!

@cdwillis I had forgotten about the Guvnor type circuits, thanks!

@MBFX I did build a VHS and ElectroVibe.

@kristopher I do some breadboarding and have successfully built a few simple circuits like the Crankshaft Distortion. I still have a lot to learn though.
