personally i'd be going for the 25V option

Looking at the schematic there are only (2) 100uf caps and they are both for DC filtering. One for the opamps and one for the PT2399. Use either one for the PT2399 (C17) since only 5V will be going there. The opamp one (C100) depends on how much power you plan on plugging into it. If you're going to try it with 18v, then use the 25V one. If not, use whichever you have more of.
