It might be easiest to just socket the diode spots and audition until you find your favorite 2. Most combos are going to sound fairly similar. High forward voltage LEDs like UV might not even noticeably clip at all.
If you are getting no bypass signal then the footswitch and/or wiring is suspect. You should have bypass signal even when there's no power applied to the pedal.

Two things, first are you testing it in the dark? This pedal will not work with light hitting the inside of the enclosure. Secondly, what you’re describing sounds more like what would happen if you had swapped the trimpots.
