Pretty sure the trims bias the individual jfets and rule of thumb is to bias them at half supply. Start there and if you really want to get into fine tuning, audio probe after the selected jfet and adjust to taste. In my experience I have seen folks bias them a little hotter than half. I think those are basing the transistors and lower values typically increase the gain. If you don't have the exact value you can put a couple of resistors in series (they add together so 2 220r would equal 440r,) or parallel which is a little more complicated math wise, but two of the same value...

It looks like an elextro but is actually an optocoupler which is basically an enclosed led and ldr. Vsctrols are a more common version of this in diy pedals. I used it cause I had them leftover from something else and had read a report that said they work. Questions are good!

I don't think the fv is that far off from the 1n34, so should be just fine. What you might pay more attention to is matching the first pair (their fv) as closely as possible. This will help create a more pronounced octave effect.
