It's literally just to accommodate different physical size trimpots. The extra pads are connected

I'm not sure that's enough. You could try some cardboard

Are you using kapton tape to insulate the pots?

Snap them apart, put the 90° pins in the PCB and solder them, then add the little adapters to the pins

Those are for the ground lugs on your input and output jacks

Have you looked at the dip switch settings info from the analogman site?

Pink LEDs are my favorite and I like the pink enclosure. I had the commercial pedal and really disliked it. Maybe you and I just have different taste 🤣

The fritter calls for a TL071. Maybe you should try that one too
