I know a bunch of people here have built this one. Any opinions on Stock vs Minimalist bypass options. I'm inclined to go minimalist but thought I'd ask around. Thanks!

it's basically a matter of:

do you want your build to be as close to the original as possible?
(= stock bypass = signal goes through input buffer + pre-emphasis + de-emphasis filters)

OR

do you want the bypass signal to be as pristine/uncoloured as possible?
(= minimalist bypass = signal goes through input buffer only)

i chose minimalist.
