The Cooking Thread

I used to work with a woman who disliked cheese. Not vegan, not intolerant, not allergic, just... thought it tasted bad. I found this waaaaay confusing. Totally understand the bad experience thing though. I haven't had chicken fried steak since IHOP gave me food poisoning in like 1993. Should've just had the pancakes....
I generally just tell people I'm lactose intolerant, unless I'm ordering pizza or planning to have the apple pie with ice cream for dessert :ROFLMAO:
 
Delicious.

It's carrots, celery, onion, garlic, peas, fake meat crumbles, dried spices. Cook it up and make a bit of a gravy in it with some red wine, flour, water and tomato paste. Then put a bunch of buttery mashed potatoes on top with a coat of parmesan and bake for about an hour.
You lost me a fake meat crumbles, but I'm down with most of the rest, not into parmesan, I try not to eat anything that smells worse than my socks!

The fake meat isn't the greatest. There is some good stuff out there, but this time it was Morning Star, which isn't really my favorite texture-wise. But we had it in the freezer and some potatoes that were about on their way out so I figured I'd throw it together. My wife is vegetarian which is why I used them.

And stinky cheese is the spice of life. Stinky foot cheese with some mustard is my jam.
 
That looks awesome. My wife is also veg and when I recently made shepherd's pie I used green lentils rather than crumbles. Wasn't lamb/beef delicious but it was still really good. Only Morningstar product we like are the chorizo style.

Lentils are a good idea, garbanzos would probably be good as well. I might have to give that a shot one of these days.
 
Being opposite of the vegetarian types, I'm trying my hand at some Keto rolls this morning, doing the low carb thing to knock my weight down and then hope to transition to just smarter eating in general, since going back to sales and being more sedentary, I've ballooned up a bit
 
Last night I roasted a chicken and some veggies for my lunches for the week. I don't get the chance to cook larger meals with meat since my wife is vegetarian, so I have been trying to make it a habit that I do something like this on Sunday afternoons.

The veggies are better than the chicken, by the way.

Braised greens are one of my favorite things to eat, especially with fried eggs over top. Last night I decided to make smashed potatoes for the first time ever and I'm not sure what I was waiting for because they were amazing.

Not the greatest plating but it gives me a reason to resurrect this thread!

Smashed potatoes are great, I like to add a bit of garlic, lemon zest and capers, + just a touch of sour cream/greek yogourt

That sounds amazing! I'll have to give something like that a shot.

I've got a lot of ideas of how I want to make these down the line already, but these were just nice and simple: butter, olive oil, salt, and pepper.
 

This one's pretty solid. I've subbed almonds and another time pistachios as I don't usually keep walnuts on hand. Also vegan Worcestershire is a good sub for anchovies if you don't get down with those.
