What's for dinner?

I had pizza last night, but hit the easy button....
I can't take credit for the dough, though. Ain't nobody got time fer that. Well, I don't, anyway.

A couple of years ago we had a basil plant sort of die, so we bought another one. When we got the watering situation sorted out the "dead" one came back and they both took over the planter, crowding out the rosemary.

They go dormant during the winter here. Not much of a winter in SoCal.

I do make my own sourdough bread, but just because store bought irritates my diverticulosis. I'm retired and I do it once every three weeks making two 4.5 pound 16" long loaves of bread. About 84 slices.

I really just dump stuff in here, just a tad bit more kneading in flour before I divide, weigh and smash into the bottom of the oiled pans. I use sunflower oil as it is a natural source of lecithin which is the main ingredient in 'no stick spray' like PAM.

This is a 1964 Hobart C100 10 quart commercial mixer. It is A BEAST at 91 pounds....

I used to eat sardines with my granddad as a kid, never understood why my grandmother made us eat them outside on the picnic table...

I tried them one time later in life... popped the tab on the can, gave it a pull and poured sardine oil all over my shirt and pants (and had to wear them for the rest of the day). I really haven't had the nerve to try them again. 😭🐟:ROFLMAO:
I love sardines until you spill the oil. Then they suck.
 
I finally got back into making baguettes. I made 5 today. I am experimenting with a different process using biga and autolysis. The dough turned out really good but I think I should have mixed the biga around a bit better. I’ll try that next time. Here are some shots.

Tonight we are making banh mi with the baguettes, pork chops and pickled veggies. I’m excited about that.

We have a fan in the oven (convection heating elements not on) but it still never manages to really puff up symmetrically. Other baked goods aren't an issue, just with these puppies it's weird.

And the side closest to the fan is the one that's flatter. Maybe the current is just directed away from whatever is right in front, idk
