It's important to think about ratios in audio though, the difference between 250k and 500k would be quite noticeable, but the difference between 500k and 1M much less so.

It looks like a tremolo effect where the LDRs are used to variably shunt signal to ground, I would say the difference between 500k and 1M is likely to be small in this circuit, though will probably affect slightly the perceived maximum "depth" of the effect.

Personally I always use VST reverbs. Though the reverbs in the Helix products are very good. But I've never really found a stomp box style verb that I really enjoy.

As to the phantom power section, a transformer isolated out will help protect the output of your circuit from getting 48v.
