    if you end up desoldering the pot, i recommend you clip each leg off the pot with a good pair of side cutters.. then desolder each pin individually...

    your soldering and wiring looks really good and your pcb is clean for a new member... could be possible you got a small hunk of a clipped lead in your pot and its stuck to the grease inside making it wonky.... or just a bad pot in general.

    Your soldering looks pretty decent.. Might wanna show your offboard wiring and how your switch and jack connections look..... You'll want to break off those tabs on your pots as well before boxing up. Double/triple check your resistor codes versus your pcb.... things like 4k7 versus 47k etc etc..
