What's the difference between the Arachnid vs. Module8 ?

The arachnid is just the pcb with no EEPROM you have to ether buy a programmed EEPROM or program one yourself the module 8 comes with the preprogrammed EEPROM with the effects listed in the description.

The explanation makes sense. If you already have the tools to program an EEPROM, the Arachnid might still be an option. Do you know if both boards behave the same once the EEPROM is loaded?

They are both exactly the same PCB.
