Hi,

What voltage do the trimmers on the End All Red OD need to be set at? I didn't see that in the build doc.

I just biased them by ear. Start with all the trimmers at noon or close to it. Then, one by one, adjust until you hear it sound best to your ear. Readjust the first one after you’ve done the second one. Shouldn’t take you more than a few minutes

There's also the service manual for the RG80 (pretty much the same thing circuit wise) that shows some voltages. If you were to bias it like the amp, you should look for ~3/5 of your supply voltage in the drain of the first fet and ~1/2 in the drain of the second one.
But it's likely you will like it more if you bias it by ear
