What's for dinner?

I love that stuff, my sister- in- law sent me a version that's made in Chicago called Chi-Lee and there was a milder version that was a perfect gateway for my kids to get in to it. I don't put it on everything but sometimes I make a pot of rice and fry some eggs just so I have something to put it on.
 
It's hard to photograph what makes this sandwich special. I noticed a couple guys opened a taco stand on the sidewalk outside my local grocery. Like... right on MLK Blvd (pdx) with just a couple folding tables, a flat top grill, and a trompo under a tent. Of course, if I see a pineapple crowned meat cone spinning there's no avoiding it. The pastor tacos were indeed legit but man this torta is exceptional. Since I could watch him make my order I saw him slap down a carpet of cheese on the flat top upon which he layered the meat, beans, and vegetables. He then scraped the toasted cheese into a dosa/cannoli like tube surrounding everything before smashing it into the bread. Incredible.

(last night) italian meatballs w/ tomato sauce.
topped off with some grated romano.

(all from scratch, even pureed the sauce lol).
takes a while but its pretty good.
 
So a lot of stink is made about the definitive sandwiches of the world but I never see the jerk chicken sandwich on any list!

If you have a half decent Jamaican restaurant near you that makes coco bread, get yourself one of these. Coco bread is made with coconut milk and has a pleasantly sweet flavor and is very pillowy. Pair it with spicy jerk chicken, lettuce, tomato, and mayo sweetened with with a little pineapple juice and it's heaven. I know the photos are crap.but trust me.

I made this with leftovers from last night's takeout. I even went out of my way to get plantains to fry up on the side.

Curiosity struck me again and led me into the dubious world of fusion food carts. This time it's a pad thai burger and it's gatdayum delicious. Tamarind and fish sauce cooked into the patty, blistered onion and peppers, sprouts, and green onions, dripping with lime juice. There was something in the mayo too but i couldn't put my finger on it. Far exceeded my expectations

The side benefit of stopping at my local food cart pod: sushi and spicy miso from the neighboring cart. Also pretty great considering it was served out of an old winnebago. 20250602_124827.jpg

Nice! My neighbors do a killer Reuben burger at their restaurant, with corned beef they smoke at home.
