Musikding standard ge diodes for this project are 1N60P.

original were 1S188-FM, i guess they're discontinued.
There’s a few places that sell them. Is it necessary to use them in order to capture the “mojo”?

a replacement can be found for cheap here for the 1S188-FM : 1K188FM
have a look at this plot to compare diodes. You will see quite a few close match for anything you look for, 1S188 and 1K188 measure the exact same, just a different name, same diode

Reverse Engineer
Pretty sure I've used 1N5817, not to mention they're probably far more consistent than germanium.
Definitely easier to source...

What are these ge diodes doing in this circuit ? Some sort of filtering ?

Seems to be a very crude way to bias the opamps. Normally there is a 470k or higher resistor there.
