The layouts on the left are for perfboard, you basically create the connections with solder (or wire I guess) as shown on the image. Google perfboard and it will make sense. The bottom right is for etching your own PCB at home, I don't know the details but I think you basically transfer that mask (the black part) onto the PCB stock and then etch away the white parts with acid.
