Going off the rails here, but whatever... One-knobber with documentation for a handful of possible fuzz circuits (mellow to extreme - the colorsound version might be to your liking when dialed in gently). Quite versatile, but yeah, no drive. I don't think you'll find anything worthwhile in that segment.

I was shocked when I saw this online for the low parts count. The gain pot can be substituted for your guitar's volume knob. An excellent breadboard candidate to tweak to the values you like. Sounds pretty good as is, but you can adjust the cap values for bass control.

Propolis fuzz is a zero knob project. Add a fake pot to it and see the placebo effect with fellow guitar players.

Take any fuzz/distortion and reduce the gain.
Also, using the forum search-engine with "one-knob" or "one-knobber" works so much better than "single knob" — took me ages to find this thread again!

Another one to consider is the Haunting Mids (no, not the JHS thing, rather the DIY Muff).

It's a Big Muff stripped of its tone and recovery stage, the gain is an internal trimmer that most people leave pegged.
You could skip the vero and easily build this on just about any PedalPCB Muff-based board.
If you used the Muffin Factory with all internal controls you'd have room for a REALLY BIG SINGLE KNOB!
