Sorry if this is a noob question but one of the diodes on the seashore overdrive is just listed as GE what should I be using for this?

A Germanium (as opposed to Silicon) diode.
They are supposed FWIW to clip less 'harshly' than their silicon counterparts. The shop stocks D9Bs (https://www.pedalpcb.com/product/a8002/).

But could be any germanium diode? Doesn’t matter which one?

It's a diode to ground, so the type is less important.
Perhaps socket the diode, and try the diodes you have on hand via a sound test.
However, when the Ge diode is instead in a feedback loop, that's when you need one with low reverse bias leakage or else it will kill the gain.
