What's for dinner?

Nonna style.
00, 60% hydration, 4 day ferement, whole San Marz
Unfortunately with the roads iced up, couldn't get good mozz. Local small store brand. I can't stand Kraft mozz, it melts like plastic.
Didn't get quite crispy enough and was to big for my baking steel.
Leftovers heated on the steel were perfect.
Next time will have to remember to up the temp and raise the rack.

I made pork fried rice last night and it was pretty damn good. I put just a tad of cabbage, some green onion and yellow onion and some mung sprouts in it. A sauce with Soy, Hoisin, maple syrup, dry sherry and oyster sauce. Probably would have been out of sight had I not forgot the egg and could have used some white pepper and a touch of salt. FYI, that Uncle Bens Jasmine ready rice works very well for day old rice straight out of the package.
