What's for dinner?

Variations of the same thing, every day. I dislike cooking / eating by myself so the less time it steals away from my day, the better.

Rice with boiling water, some random spice mix (Cajun, Mexican, Arabic, Indian, etc) + mayo (acts as an oil when it falls apart) and whatever I feel like grabbing from the freezer. 2min of work, 35min of of the oven doing its thing. And then shovel it all down.

Starts out as vomit...

Happy New Year’s all. My wife demands pork and sauerkraut each year. My gut can't handle it so I am going to make a cast iron deep dish tonight.

In the meantime I seared off some tenderloin, took off the pan, cooked down a yellow onion, then two sliced apples, added the kraut after rinsing it and squeezing it dry. I deglazed it all with a can of dry apple cider. I threw the tenderloins back in and braised it in my steel pan until it hit 145. Added a bay leaf and some fennel. The pork had a darker crust but braising it took it down some.

It will sit in Tupperware until it comes out later tonight. Yuck.

Hababichi abuse! I don't think I had ever felt sorry for an outdoor cooking device before this lady. She never explains exactly what "American classic" this is supposed to be. Is it meatloaf, meatslab? Does smashy smashy mixy mixy work better hot? I have so many questions. Though I find food waste offensive, I hope they throw away all 20 lbs of that meatloaf flavored paste afterwards.

Sigh... Something something fresh ground salt....
