Don't want to be party pooper, but my mom gave me the vegetarian treatment when I was yong, I'm talking in the late 80s, beginning of the 90s ... I don't miss bacon, but I have it only a few times a year. I do like a good steak or sausages from time to time. To me good balance is key, I do like tofu when properly cooked... but fake meat, no thank you.

But I also respect you, you have your reasons to do it.
 
Some of the fake meat stuff is pretty decent. I prefer the impossible stuff over the beyond stuff, generally speaking. The impossible chicken nuggets, cut into quarters and tossed in Buffalo sauce and put on top of some of that Panera Mac and cheese they sell at Costco makes for a great Buffalo Mac to pack as a lunch.

I’ve had some really good chili lime tempeh wings from a restaurant near where my sister lives too, but those weren’t really trying to be chicken or anything— it’s just tempeh on a wooden handle, seasoned well, crisped up, and coated with a really great sweet chili lime glaze.
 
I was a vegetarian back when Taco Bell bean burritos were 59¢ each. I lived on those, pasta, hummus, and falafel for years.

I have many authentic places near me, all with various ‘veggie” options. I eat Mexican food at least twice a week, and it lasts two meals…
