I did make a concession to just use an on/on, but I don't think I'm missing out on too much variation in sounds available.

Yeah, the middle setting is the mild setting. I don’t even use it.

I've got long-bat on-off-on DPDT from Tayda;
pretty sure I've got some short-bats either from SBP or BLMS.

BLMS has the black short-bat, and then you could stick a red toggle-cap on it for good measure (also available from SBE, cut cap to fit if too long):
