The Epiphone was one of the higher end ones valued at $1,000 and the Strat was over $900 (American territory). That ain't chump change.

Snatch and run thieves just take whatever opportunities they get. Taking time and effort to try to grab something more valuable and you're that much more likely to get caught.

EDIT: A friend of mine owned a Telecaster that a junkie acquaintance pinched from a store that way. It was later stolen from his house in a burglary, which is mildly ironic.
