Not sure what the trimpot does, but you could use a six hole and wire a pot for the trimmer, may not be practical depending on function

That’s almost definitely a bias adjustment for the BBD. If so, it’s a set and forget kind of thing.

Yeah wouldn't want that out front

Yep, that's a Vref bias adjustment. I don't think there'd be any reason to adjust it once it's set.
