I am building an octonaut and have a couple of questions

I am building an octanaut and everything is fine up to now. I have 2 issues: I can't tell which direction to mount the transformers - primary and secondary aren't defined. Secondly, what is the voltage i am looking while adjusting the trimmers.

The primaries face down, toward the footswitch holes.
Voltage is largely use preference in this circuit. Just set em for the amount of saturation that you like
